High Protein Plant Based Breakfast
I’m always searching for high protein substitutes to increase my intake and I love using chia seeds in my breakfasts and desserts at 20g of Protein per 100g. This amazingly healthy and delicious superfood breakfast vegan bowl is packed with Omega-3s, protein, vitamins, fibre and antioxidants.
This recipe is so simple and most of it can be prepared the night before. Allowing the chia seeds to soak overnight with the rest of the ingredients, creates a gel like gooey mixture and with the addition of the orange zest its like eating the worlds healthiest orange sherbet for breakfast. The recipe is as follows:
- 2tbsp chia seeds
- Tsp cacao powder
- 150 ml almond milk
- 3 tbsp freshly squeezed orange juice
- zest 1 orange
- tsp maple syrup or equivalent sweetener of your choice
- Mix the above ingredients together in a bowl and leave in a refrigerator overnight.
- The next morning when ready to devour top with Greek yogurt, homemade granola and cocoa nibs.
