Vegan Peanut Butter Pie

  • 75g (1½ cups) Oats
  • Tbsp Vegan Fruit Syrup
  • Scoop of Vegan Protein
  • 50ml (1/2 cup) Almond Milk
  • Tbsp Melted Coconut Oil
  • 180g Tofu
  • 3 Tbsp Peanut Powder
  • Tbsp Vegan Fruit Syrup
  • 45g (1/2 cup) Tinned Coconut Milk
  • Topping: Vegan Chocolate of your choice
  1. Mix all the ingredients for the base in a blender until a sticky dough forms
  2. Flatten the base into a round silicone cake mould
  3. Add the topping ingredients into a blender until smooth. Taste and adjust adding more peanut powder or fruit syrup if required.
  4. Pour the topping over the base and then sprinkle with the chopped chocolate.
  5. Place in the freezer for 20-30 minutes to set before serving.
  6. Store in the Fridge.
