Savoury Porridge Breakfast Bowl

  • 40g of porridge oats
  • 175-200ml of milk
  • Tbsp Tahini
  • 1 free range egg
  • handful of kale, washed
  • 30g of feta (optional)
  • ¼ Avocado
  • Pinch of salt and pepper
  • Splash of olive oil or ½ TBSP of butter
  1. Place the oats and the water in a pan over a medium heat. Add a tiny pinch of salt along with the tbsp of Tahini and stir with a wooden spoon. Bring to a steady simmer for 3-5 minutes, stirring every so often to prevent it from cooking too quickly.
  2. While the oats are cooking melt the butter or oil in a frying pan and add the egg along with the kale frying for around the same time as the oats. Season with salt and pepper.
  3. Spoon the oat mixture into a bowl and add the kale, egg and crumbled feta on top if using. Serve immediately with an extra drizzle of tahini.
