Unicorn Protein Donuts... these healthy little donuts not only taste delicious but just how fun do they look! These donuts are packed with 'superfoods' and the recipe includes both vegan and gluten free subs.
  • 35g White Flour
  • 40g Wholemeal Flour
  • 25g Protein (I used vegan caramel protein)
  • Tsp Baking Powder
  • 40g Sugar (I used zero calorie sugar)
  • 1 egg (or ½ cup almond milk)
  • 30g Yoghurt (vegan or greek)
  • ½ cup almond milk or an extra ¼ cup if not using an egg
  • 20g melted butter or cacao butter beans
  • 1 cup of powdered sugar (I blended up zero calorie sugar)
  • Tsp pink berry superfood power
  • Tsp superfood blue powder
  • Almond Milk as required
  1. Preheat the oven to 180oc.
  2. Add milk & yoghurt and whisk together before adding melted cooled butter, and whisk again.
  3. Sift in Flour, protein and baking powder and mix until just combined ( a few lumps are ok)
  4. Place in a silicone or greased non stick donut pan. Bake for approx 14 mins.
  5. Take them out of the oven and let cool before removing.
  6. Mix together ½ cup powdered sugar and one tsp of powder in two separate bowls to get the two colours. Gradually add almond milk until you get the desired consistency of frosting.
  7. Once cooled dip the donut in the frosting and then leave for at least 10 minutes to set
