Raspberry, Banana and Papaya Overnight Oats

  • To make the oat layer:
  • 50g Oats
  • 30g Vanilla Whey
  • 90ml Coconut milk
  • To make the Papaya and Banana Smoothie:
  • 85g Papaya
  • 15g Vanilla Whey
  • 40g frozen Banana
  • Raspberry topping:
  • 50g Raspberries
  1. Place the oats in a bowl then, in a blender, blend the coconut milk and protein powder. Pour the mixture over the oats and stir until well combined. Set aside.
  2. Wash out the blender and then place into it the papaya, banana and whey. Pulse until totally smooth.
  3. Then the fun part, layering up the parfait! Begin with a layer of oats on the bottom, followed by a layer of the puree and one more layer of the oats.
  4. Lastly, blend the raspberries with a little bit of water, about 10-20ml and add to the top layer.
  5. Place in the fridge overnight.
  6. Remove your oats right before you're ready to eat them, and sprinkle with some desiccated coconut or other toppings of your choice.
