Healthy Chia Breakfast Parfait

This simple Superfood Chia Pudding is made with chia seeds, superfood powder and almond milk then layered with yoghurt, peanut butter, cereal and fruit; it’s a healthy breakfast loaded with protein, fibre and healthy fats! Its gluten free and Vegan.

Im going to keep this one very short and simple as that pretty much sums up this recipe nicely. Its the kind of breakfast (or dessert) where pretty much no thought is required except the 2 minute job of making up the chia pudding either the night before or 30 minutes before you want to eat it.

So along with the chia seeds and almond milk, I made this pudding with a couple of additional powders hence the purple colour; acai and haskapa powders.

Haskapa Berry Powder is an antioxidant-rich powerhouse made from gently freeze-dried haskap berries to preserve their natural goodness. It contains up to three times more antioxidants than blueberries. Acai powder is also a rich source of protective antioxidants, omega fatty acids, amino acids, and dietary fibre. Two great additions to your morning breakfast. They are of course optional so if you don’t have either of these powders then feel free to just miss them out.

As you can see from the pictures I layered the chia pudding with some of my other favourite breakfast ingredients; cereal, peanut butter and fruit. However, feel free to be as creative as you want with this part and layer with your breakfast favourites.

This super simple Superfood Chia Pudding is made with chia seeds, superfood powder and almond milk then layered with yoghurt, peanut butter, cereal and fruit; it’s a healthy breakfast loaded with protein, fibre and healthy fats! Its gluten-free and Vegan
Ingredients
  • 2 Tbsp Chia seeds
  • 50ml Almond MIlk
  • Tsp Acai powder (optional)
  • Tsp Haskapa Powder (optional)
  • 130g (1 cup) of greek yoghurt or coconut yoghurt
  • 10g (1 cup) Puffed Buckwheat
  • Handful of fruit/ berries
  • Tbsp Peanut Butter
Instructions
  1. Combine the chia seeds, almond milk and powders and leave in the fridge for at least 30 mins until the mixture has thickened
  2. Once the chia pudding is ready simply layer with all of the other ingredients in a jar
