Matcha Lime Raw Cheesecake

Fancy an indulgent dessert/ snack that tastes like cheesecake without the sugar and only natural ingredients? Then you need to try this recipe!

The base for this raw cheesecake is very similar to my Chocolate Oat Protein Slices which I just loved! By combining ingredients such as oats, whey, egg whites and coconut you get a perfect soft biscuity protein packed base.

For the topping I used quark which is a rich source of protein and calcium and is packed with vitamins. This mixed with Matcha green tea powder makes a powerful combination of antioxidants. What more could you want from a dessert or snack?!

The desiccated coconut and coconut milk mixed with a sugar free syrup helps give this cheesecake that perfectly sweet taste to counteract the Matcha. See below for the recipe….

Matcha Lime Raw Cheesecake

Ingredients
  • FOR THE BASE:
  • 2 tbsp Almond Butter (can use another nut butter)
  • 2 tbsp low cal fruit syrup (or maple syrup)
  • 2 tbsp Coconut Oil
  • 1.5 tsp Vanilla Extract
  • 120g Oats (use gluten free oats if required)
  • 20g Desiccated Coconut
  • 2 scoops of whey protein (any flavour)
  • 6 tbsp egg white
  • FOR THE TOPPING:
  • 1 tbsp Almond Butter (can use another nut butter)
  • 2 tbsp low cal fruit syrup (or maple syrup)
  • 1 tbsp coconut oil
  • 1 tbsp Matcha Powder
  • 40ml reduced fat coconut milk
  • 55g quark
  • ½ Lime
  • Extra toppings to include: hemp seeds, desiccated coconut
Instructions
  1. To make the base combine the nut butter, coconut oil and fruit syrup in a small pan and heat gently until the coconut oil has melted
  2. Remove from the heat and stir in the vanilla, oats, coconut, egg white and protein powder until well combined and the mixture forms a sticky dough
  3. Tip the oat mixture into a lined circular tin and spread evenly. Keep this in the freezer while you make the topping
  4. To make the topping, gently heat the nut butter, fruit syrup and coconut oil again until all the oil is melted. Remove from the heat and whisk in the matcha powder followed by the coconut milk and quark until a smooth green mixture is formed.
  5. Finally add the zest and juice of the lime to the mixture.
  6. Remove the tin from the freezer and top with the sauce, Sprinkle over your chosen toppings and return to the freezer for a minimum of 3 hours.
  7. Slice and enjoy!
