Autumn/ fall Snack Heaven: I think so. The perfect combination of pumpkin, nut butter, protein powder and seeds in one little healthy powerhouse ball. They are Gluten Free and Vegan.
I keep thinking I’ve made the best pumpkin puree snack and then BAM another idea comes along and it becomes my new favourite. Pumpkin has to be one of the most versatile ingredients (like banana) that just literally works in everything!
These little high energy balls are packed with so much goodness. Particularly the mixed seeds I used: a perfectly mixed combination of super seeds such as chia, buckwheat, hemp, pumpkin seeds & almonds. Which area an excellent source of protein, vitamins, minerals, antioxidants & prebiotic fibre.
You can get creative with these and add in different ingredients depending on what you have in the cupboard. I used prunes but you can use dates and if you don’t have a mixed seed mix you can create your own with whatever seeds you have or chopped nuts work great as well.
Its the easiest and tastiest snack you can make up in less than 10 minutes without even needing to get a chopping board or bowl out! Whats stopping you?!
- ½ cup Vegan or Whey Protein Powder (I used salted caramel flavour)
- ¼ cup 3 Nut Butter (can use any nut butter)
- ½ cup Pumpkin Puree
- ¼ cup Prunes
- ½ cup Oats
- 1 Tbsp mixed seeds
- 1 Tsp light fruit syrup
- 1 Tsp Pumpkin Spice
- Combine all the ingredients in a food processor
- Form into small balls
- I keep mine in the fridge for a week or freeze a batch
