This Gluten Free Salted Caramel Courgette (zucchini) Banana bread is made without any butter or oil, but its so soft and dense that you’d never be able to tell it’s healthy! Egg Whites, banana, and grated courgette keep it extra moist, while the maca and peanut powder add a tasty superfood punch!
I’m currently sat on the train to London munching on one of these yummy banana slices as I type. It took a few attempts to get this recipe just right, as when you add protein powder to a recipe you have to get the right balance of wet ingredients to avoid it becoming too dry. I do however feel I’ve nailed it with this one like my Chocolate and Courgette Protein Loaf. The base for the bread is very similar to the chocolate one, I just fancied changing the flavours up a bit and to be honest I think I actually prefer the salted caramel flavour to the chocolate (I’m shocked too).
I love how versatile banana bread is. It makes a great snack but also a great on the go breakfast. Try adding a spread of peanut butter or a layer of yoghurt and a few berries on top for even more yummyness.
As you would have read in the first paragraph this bread also contains courgette. So your breakfast/ snack just got even healthier! The great thing is, you can’t even taste it but it adds so much moisture to the mixture as well as health ofcourse
This loaf contains 7g Protein per slice, with the protein coming from egg whites, egg and protein powder! You could however make this recipe Vegan by subbing the egg for a flax egg (mix one tablespoon ground flaxseed with three tablespoons of water) and double the almond milk instead of using egg whites as well as using vegan protein. Let me know if you try it using these Vegan subs as i’d love to hear how it goes.

- 50g (1/3 cup) Salted Caramel Protein Powder (could sub with vegan protein)
- Tbsp Maca Powder
- Tbsp Peanut Butter Powder
- 100g (1 cup) Oat Flour (Oats blitzed)
- 100g Grated Courgette (half a large courgette)
- Tsp Baking Powder
- Tsp Cinnamon
- 1 egg
- 1 banana
- 45g Egg Whites (5 tbsp)
- 50ml Almond Milk
- Cacao Nibs for topping
- Preheat the oven to 170oc
- Combine all the dry ingredients in a bowl
- Combine all the wet ingredients in another bowl and then add to the dry mixture
- Pour the combined mixture into a lined loaf tin
- Top with the cacao nibs
- Bake in the oven for around 30 minutes or until a knife inserted comes out clean
- Leave to cool then slice and enjoy
