Ever thought of making your morning porridge savoury? Check out this quick and easy savoury oat recipe topped with a runny egg, avocado and feta cheese!
I have to say I was totally sceptical too when I first heard about savoury porridge….but its true what they say, don’t knock it until you’ve tried it! It almost tastes like risotto without the faff of making it. As with your traditional morning porridge its all about the toppings too right?! And I’m not sure there are any better toppings than avocado and egg! Im thinking weekend brunch with a twist is sorted.
The beauty about this Savoury Porridge Breakfast Bowl is you could definetly have it for any meal of the day and you can obviously prepare savoury oats a thousand different ways, by stirring in different ingredients and flavourings.
I love that it’s an easy vehicle for getting in lots of nutrients and fibre, not to mention the protein and healthy fats from the egg and feta cheese. Check out the super easy recipe below…
- 40g of porridge oats
- 175-200ml of milk
- Tbsp Tahini
- 1 free range egg
- handful of kale, washed
- 30g of feta (optional)
- ¼ Avocado
- Pinch of salt and pepper
- Splash of olive oil or ½ TBSP of butter
- Place the oats and the water in a pan over a medium heat. Add a tiny pinch of salt along with the tbsp of Tahini and stir with a wooden spoon. Bring to a steady simmer for 3-5 minutes, stirring every so often to prevent it from cooking too quickly.
- While the oats are cooking melt the butter or oil in a frying pan and add the egg along with the kale frying for around the same time as the oats. Season with salt and pepper.
- Spoon the oat mixture into a bowl and add the kale, egg and crumbled feta on top if using. Serve immediately with an extra drizzle of tahini.
