Vegan Peanut Butter Pie

This Vegan Peanut Butter No Bake Pie with a yummy oaty crust and chocolatey topping is a simple to prepare and super delicious dessert. It is also gluten-free and refined sugar free.

I love making up vegan desserts and I had been meaning to make a vegan dessert using Tofu for some time. After searching for some recipe inspiration I came across a few peanut butter pies just like this one but often using a cracker or biscuit crust. So I decided to adapt some of these recipes to one of my own bases and also add a ‘cleanleanbakes’ Protein twist.

The beauty of this dessert is no baking is required, meaning you can simply make it up, pop it in the freezer to set and then slice! I loved having this as a mid afternoon snack with a good old english cup of tea. Each slice is around 120 calories and contains 8g Protein as well as good dose of healthy carbs (from the oats) and fats (peanut butter). No longer is making vegan desserts a complicated and costly experience, with many of the ingredients being your typical cupboard staples.

  • 75g (1½ cups) Oats
  • Tbsp Vegan Fruit Syrup
  • Scoop of Vegan Protein
  • 50ml (1/2 cup) Almond Milk
  • Tbsp Melted Coconut Oil
  • 180g Tofu
  • 3 Tbsp Peanut Powder
  • Tbsp Vegan Fruit Syrup
  • 45g (1/2 cup) Tinned Coconut Milk
  • Topping: Vegan Chocolate of your choice
  1. Mix all the ingredients for the base in a blender until a sticky dough forms
  2. Flatten the base into a round silicone cake mould
  3. Add the topping ingredients into a blender until smooth. Taste and adjust adding more peanut powder or fruit syrup if required.
  4. Pour the topping over the base and then sprinkle with the chopped chocolate.
  5. Place in the freezer for 20-30 minutes to set before serving.
  6. Store in the Fridge.
